Snake Gourd (Padwal/Padavalanga) - 1 arm length piece<br />
Onion - 1 (cut small size)<br />
Capsicum - 1/2 of a big one (cut small size)<br />
Garlic - 2 tsp (chopped)<br />
Green chilli - 2<br />
Pepper - 1/2 tsp<br />
Salt as required<br />
Oil as required<br />

<b>For making batter</b><br />
Maida - 1 tbsp<br />
Corn flour - 1 tbsp<br />
Red chilli sauce - 2 tsp<br />
Salt - to taste<br />
Water - as required<br />

<b>For making sauce</b><br />
Water - 1 cup<br />
Soya sauce - 2 tsp<br />
Corn flour - 1 tsp<br />
Sugar - 1/2 tsp<br />

<b>Method</b><br />
<br />
Step 1:<br />
Cut and clean snake gourd.<br />
Slice it into baby finger size pieces.<br />
Make a thick batter from ingredients under <i>for making batter.</i> Use little water. Batter should be thick.<br />
Heat oil. Dip the gourd pieces in batter and deep fry until golden brown. Keep aside<br />
<br />
Step 2:<br />
Heat 1 tsp oil in pan.<br />
Add chopped garlic and sliced green chilli<br />
Saute for few seconds<br />
Add onion (cut into small pieces). Saute until it is pink and transparent.<br />
Add salt and pepper.<br />
Add capsicum pieces. Saute until it is done. Don't overcook.<br />
Keep aside<br />
<br />
Step 3:<br />
Mix together all ingredients coming under "for making sauce"<br />
Heat a pan.<br />
Pour this mix and let it boil.<br />
The liquid will become saucy and thick.<br />
Switch of the flame.<br />
<br />
Into this sauce add the sauteed vegetables (from step 2) and fried snake gourd pieces (from step 1).<br />
Enjoy with rotis<br />

<li>Tomato - 1 large (sliced)</li>
<li>Turmeric powder - 1/2 tsp</li>
<li>Coriander powder - 2 tbsp</li>
<li>Garam masala - 1 tsp</li>
<li>Lemon juice - 1tbsp</li>
<li>Coriander leaves - a handful chopped</li>
<li>Grated coconut - a handful</li>
<li>Curd - 1/2 cup</li>
<li>Ghee</li>
<li>Oil</li>
<li>Salt</li>

<b>Method</b><br />
<ul style="text-align: left;">
<li>Clean cauliflower and separate the florets</li>
<li>Grind ginger, garlic and green chilli in a mixer. Keep aside</li>
<li>Grind coconut and curd together into a fine paste. Keep aside</li>
<li>Heat oil</li>
<li>Beat egg with little salt. Dip cauliflower florets in beaten egg and deep fry. Keep aside</li>
<li>In a thick bottomed vessel, add little ghee/oil.</li>
<li>When the oil is hot add onion and saute until it slightly brown</li>
<li>Add ginger-garlic-green chilli paste and saute again until the raw smell goes.</li>
<li>Add turmeric powder, coriander powder and garam masala. Saute </li>
<li>Add sliced tomato, coconut-curd mix and saute. </li>
<li>Add salt to taste.</li>
<li>Now add the fried cauliflower and mix well. Cover and cook for 5-7 minutes. </li>
<li>Your cauliflower masala is ready now.</li>

<li>Heat ghee in a pan and saute rice with spices for 2-3 minutes. </li>
<li>Boil water in a thick bottomed vessel. When it starts boiling add rice and spices. Add salt.</li>

<b>For serving</b><br />

<li>In a vessel layer the cauliflower masala in the bottom</li>
<li>Layer rice above it sprinkling garam masala in between. </li>

<li>Beat the eggs until really fluffy. Beat it continuously for 5 minutes on high speed. </li>
<li>Add powdered sugar in small quantities at a time. Blend with mixer on high speed.</li>
<li>Then add water and vanilla essence and blend on low speed.</li>
<li>Add maida, baking powder salt and fold in slowly. </li>
<li>Pour the batter into the pan and keep in oven. </li>
<li>Bake for 15-20 minutes or as per your oven adjustments.</li>

<li>Beat your whipping cream during this time. You can add a tbsp of icing sugar, vanilla essence and 1 tbsp of cocoa powder and beat.</li>

<li>Place a baking paper (or a cotton clean towel) bigger than your cake on the table top. </li>
<li>Sprinkle some icing sugar on the paper/towel. </li>
<li>Once cake is baked, over turn it on this paper (or a cotton towel) while it is hot. </li>
<li>Slowly remove the paper from the top of the cake and roll the cake along with paper/towel below (the one which you sprinkled sugar on). Keep it as such until cooled or for atleast 30 minutes. </li>
<li>Once cooled open the cake and spread the ganache and roll it (this time without paper)</li>
<li>Keep this roll in fridge again. </li>
<li>Take out the roll, place it on the display plate, cut both edges and then put the whipping cream on top. Give designs with fork and use<a href="http://noelcollections.blogspot.com/2013/11/checkerboard-cake-with-fondant.html"> fondant </a> for trees and leaf designs </li>

<b>Method</b><br />

<li>Dry roast oats in a pan for 2 minutes. Keep it aside. (Dry roasting means you've to roast items in a pan without oil)</li>
<li>In a pan heat oil.</li>
<li>Add mustard seeds and cumin seeds. Let it splutter.</li>
<li>Add chopped ginger, onion, curry leaves and green chilli. Saute for 2 minutes or until onions are transparent.</li>
<li>Add salt to taste.</li>
<li>Add chopped tomato.</li>
<li>Saute for 1 minute.</li>
<li>Add dry roasted oats and mix well.</li>
<li>Add water (3/4 of a cup and add more if required)</li>
<li>Mix well. Put the flame on low. Cover and cook for 4 minutes.</li>
<li>Sprinkle some chopped coriander leaves. Mix well.</li>
<li>Serve hot. ( Try with a little sugar. You'll love it)</li>

I got some juicy fleshy grapes from Swapna chechi and she suggested to make jam with it. I was hesitating in the beginning but then decided to try it. Now I'm completely sure I'm not going to pick any jam jars from supermarkets anymore. These homemade ones are easy to make and yummy too. My son loves it. My mother used to make these jams at home. I took the snaps when jam was hot. So it was a bit loose in texture. This is the consistency when you've switch off the flame. It will become thick as it cools. <li>Clean and cook your grapes adding water in pressure cooker. It takes 2-3 whistles. Cook well. </li>
<li>When the cooked grapes cool, run it in a blender.</li>
<li>Pour the blended grapes into a strainer and get all the pulp you can.</li>
<li>Pour this into a thick bottomed vessel. Add sugar. Put on flame. </li>
<li>Allow it to simmer and reduce. Stir in between. The whole process of reducing takes about 20-30 minutes. </li>
<li>The jam thickens as it cools. So you've switch off the flame when the consistency is a bit loose in texture. </li>
<li>Towards the end before switching off add the lemon juice and simmer for 2 minutes. Add a drop of colour at this stage if you want. </li>
<li>Switch off the flame. </li>
<li>Pour into clean glass vessel before it starts thickening. </li>

<li>In a pressure cooker add little water along with plantain pieces cook it well and mash.</li>

<li>Switch on the flame and let it cook for a minute. Do not allow it to boil. </li>

This post is for someone who is very passionate about cooking and baking. She is my friend and cousin Swapna chechi. She did one amazing fondant cake with cosmetic theme on her daughter's birthday. It was the first time she was trying fondant and the cake looked beautiful. All the little girls who came for the party was surprised to see an edible palette of cosmetics on the cake. The cake was a combination of red velvet cake and vanilla layers. The fondant was made of marshmallow and tasted nice. She made marshmallow fondant 3 days in advance and kept it covered with cling film and in an air tight vessel in refrigerator.<br />
Here are the some steps of decorating the cake.<br />

<li>The cake was of three layers bottom and top layer being vanilla and middle one red velvet. The cake was covered with chocolate butter cream (kid's favourite). </li>
<li>The nail polish bottom part is fondant and the cap is dark chocolate. The eye shadow base is caramel toffee which she flattened. The mascara stick is a toothpick dipped in chocolate and chocolate vermicilli used for decorating. </li>
<li>The lipstick is coloured fondant and the base is chocolate. The blush is a combination of caramel toffee and chocolate. </li>

<li>Cook the carrot and green peas adding little salt. (You can use veggies of your choice like mushroom, corn etc.)</li>
<li>To make white sauce heat butter and olive oil in a kadai.</li>
<li>Add maida and stir it for 10 seconds.</li>
<li>Don't let it burn. Add milk and stir very quickly so that it doesn't form lumps. </li>
<li>Let it simmer and thicken.</li>
<li>Add salt to taste and pepper powder. (Be careful to add salt as required as you're cooking vegetables with salt.)</li>
<li>Switch off the flame. </li>
<li>Add chopped onion, cooked carrot and green peas. Mix well. <i><span style="color: red;">see Note</span></i></li>
<li>If the mix seems loose, switch on the flame and thicken it so that u can take scoops of it. </li>
<li>Switch off the flame.</li>
<li>Put bread crumbs in a plate. </li>
<li>Keep beaten egg white/loose cornflour paste (add 1/2 cup water to cornflour and make a paste) ready</li>
<li>Take a scoop of the veg mix and put in crumbs. </li>
<li>Roll in bread crumbs. </li>
<li>Dip the roll in egg white/cornflour paste</li>
<li>Again roll in bread crumbs</li>
<li>Deep fry in oil. </li>

This is an item which I did when my cake didn't come out as well as I thought it would. There was some flop show in between and so ended up with chocolate balls. These balls were an instant hit. <li>Break the cake into fine crumbs. My cake was very soft and sticky so there was no need to add chocolate syrup. If yours become bit dry add little chocolate syrup. Mix with hand and make small gooseberry sized balls.</li>
<li>Using a fork and spoon dip each ball in the melted chocolate. Let excess chocolate fall down. Keep on a wax paper and refrigerate for 2 hours. </li>
<li>You can keep these refrigerated and thaw it as required.</li>

Again I thought of hibernating for sometime and then wake up with a new set of recipes. It was not actually hibernating but a series of cold and cough. All three of us were taking shifts and taking medicines. I've been trying many dishes but became too much lazy to draft it and publish. The snaps are there and so will soon appear here. When I brood it is very difficult to bounce back. This time there was another tension of sending my son to playschool. I had a bad time for almost a week sitting at home without him and adjusting. My son is not a big fruit fan. This time it was papaya and he was running around not even trying to taste it. I tried to disguise it as a halwa/jam and gave him in a piece of bread. He loved it. This can be stored in fridge for a week. It is yummy and 100 times better than store bought jams. Some add rice powder in this to make it thick(as in the case of halwa), but I wanted to use papaya as jam too, so I avoided it. Try this for your dear ones.<br />

<li>In a thick bottomed non-stick pan, put the scooped mashed papaya. Switch on flame.</li>
<li>Add powdered sugar and cardamom powder to this and allow to simmer on medium flame. </li>
<li>Add ghee. Let it simmer, stirring occasionally until the mix starts to leave from sides of vessel and becomes thick. </li>
<li>Grease a plate and transfer the halwa to it.</li>

<li>Mix together maida, salt and melted butter. Add enough water to make a non-sticky dough.</li>
<li>Crumble paneer well</li>
<li>Mix together all ingredients from 2 to 6 very thoroughly.</li>
<li>Roll out the dough into small circles (poori size)</li>
<li>Put a spoon full of paneer filling in it and fold over into a half moon. Lock the sides. Give designs with fork. I used a mould to make this. (You get different moulds in market) (At this stage you can freeze it and fry as required)</li>

<li>Onion - 2 big chopped</li>

<li>Coriander powder - 2 tsp</li>

<li>Oil for sauteeing</li>

<b>Filling method</b><br />

<li>Cook the chicken with little salt and mince it. </li>
<li>Chop onions</li>
<li>Heat oil in a vessel</li>
<li>Add ginger garlic paste and chopped onions. Saute until onion is transparent. </li>
<li>Add turmeric powder, chilli powder and coriander powder. Saute</li>
<li>Add salt as required. Remember you've added salt while cooking chicken. So add accordingly. </li>
<li>Add minced chicken, tomato and capsicum. Saute for 2 minutes.</li>
<li>Add 1/2 cup chicken stock/water, cover and cook for 2 minutes</li>
<li>Open the lid and saute until the mix is dry. Cool and use as filling.</li>

<b>Bread method</b><br />

<li>Warm the milk and add this to yeast along with sugar. Allow to ferment for 10-15 minutes. (Don't overheat the milk as it will kill yeast)</li>
<li>Mix together maida and salt</li>
<li>Take 2 cups of maida-salt mix in a bowl </li>
<li>Incorporate butter and oil into maida to get bread crumb texture.</li>
<li>Add one egg yolk.</li>
<li>Add fermented yeast and mix well to get a sticky dough.</li>
<li>Add the remaining 1/2 cup of maida as required to get a not too sticky or not too stiff dough. (I had 1/4 cup of maida remaining)</li>
<li>Brush 1 tsp of oil over the dough and keep it covered for increasing for 3 hours. </li>
<li>After 3 hours punch down the dough</li>
<li>Sprinkle little flour on a surface and roll out the dough and make it into desired shape as per your creativity. I made it triangular.</li>
<li>Roll out the dough. Cut triangle shape and put the filling on the base of the triangle</li>
<li>Roll from the base with filling to the vertex of the triangular shaped dough. </li>
<li>Preheat oven at 200 degrees centigrade. </li>
<li>Keep the rolled dough with filling on a baking tray with parchment paper (butter paper) allow it to rest for 20 minutes.</li>
<li>Brush with egg white (to get good shiny brown colour)</li>
<li>Bake in preheated oven for 20 minutes at 200 degree centigrade. </li>
<li>Brush with butter as soon as you remove from oven. </li>

<li>Tomato - 1</li>
<li>Capsicum - 1 </li>
<li>Chilli powder - 1 tsp</li>

<li>Coriander leaves - 3-4 twigs</li>
<li>Oil for sauteeing</li>
<li>Salt to taste</li>

<li>Chop garlic and add to the hot oil. Saute until it becomes light brown.</li>
<li>Add the chopped tomato and capsicum. Saute until it becomes soft. </li>
<li>Add the chilli powder and chilli flakes. Saute for a minute. </li>
<li>Add little water. Cover and cook for 2 minutes. </li>
<li>Switch off the flame and allow the mixture to cool. </li>
<li>Wash and chop coriander leaves and add to the above mix.</li>
<li>Once cooled transfer it to a blender and blend well. </li>
<li>Have with yummy idli or dosas. </li>

<b>Method</b><br />
<ul style="text-align: left;">
<li>Make sure all ingredients are at room temperature.</li>
<li>Preheat oven. </li>
<li>Powder the sugar. Keep aside</li>
<li>Sieve together maida, salt, and baking powder. Keep aside</li>
<li>In a bowl put butter and powdered sugar and beat well until soft and fluffy.</li>
<li>To this add vanilla essence. Mix well.</li>
<li>Add eggs one by one and blend well using the mixer. </li>
<li>Add half of the dry mix (maida & baking powder) to the above and fold in gently. </li>
<li>Add 1/2 quantity of the milk given ingredients to the batter. Fold in.</li>
<li>Add the remaining dry mix and fold in. </li>
<li>Divide the above batter into 2 parts.</li>
<li>Into the remaining milk mix cocoa and instant coffee. Strain it. </li>
<li>Add this to one part of the batter. Fold in slowly and beautifully well. </li>
<li>Now grease a cake tin and pour vanilla batter on to the base. </li>
<li>Pour chocolate batter on top of it. Spread and gently move a spoon through both batters in zig zag motion. Don't over mix.</li>
<li>Bake at 150 degrees for 35-40 minutes or until a tooth pick inserted comes out clean. (All ovens vary, so adjust it accordingly)</li>

<li>Preheat your oven at 150 degree centigrade</li>
<li>Peel and core apples</li>
<li>Take 1 and 1/2 apples and puree it adding milk. Keep aside.</li>
<li>Chop the remaining 1/2 apple into small pieces</li>
<li>Sieve together maida and baking powder. Keep aside. </li>
<li>In a bowl, mix together sugar and refined oil. </li>
<li>Add pureed apple to this along with cinnamon powder. Mix well.</li>
<li>Add maida and baking powder mix now and fold in. </li>
<li>Mix together the chopped apple, chopped walnut and choco chips</li>
<li>Mix a little maida (1/2 tsp) into the chopped apple, walnut and choco chips. (So it doesn't sink down when cake raises)</li>
<li>Add this fruit nut mix into the maida batter and fold in. </li>
<li>Pour into muffin cases and bake in oven for 20 - 25 minutes. (This one takes a little longer than other cakes). </li>
<li>(Adjust your ovens accordingly). Check when it is 18 minutes. Bake until a tooth pick inserted comes out clean. </li>

<li>Beat egg white with a fork.</li>
<li>Take the seeds from cardamom. </li>
<li>Mix together all ingredients from crumbled paneer, bread, sugar, cardamom seeds, grated coconut, beaten egg white, raisins & cashewnuts and combine them well with hand applying little pressure.</li>
<li>Make small balls out of it.</li>
<li>Heat oil in deep vessel.</li>

Wouldn't it be exciting if your little one waited patiently in front of the oven when the cake was baking and then had 3 full ones when it was out of the oven. He didn't even let it cool. I was so happy to see this. Actually he didn't have a proper dinner but was very excited when I took the cake tray to bake. He loved this one.<br />

<li>Sieve together maida, cocoa powder, milk powder and baking powder. Keep aside</li>
<li>Puree banana and keep aside.</li>
<li>Mix instant coffee and warm water. Keep aside</li>
<li>In a bowl mix together oil and sugar.</li>
<li>Add banana puree to this and blend well. Add vanilla essence, mix well.</li>
<li>To this add the dry mix and blend well with a wooden spoon. </li>
<li>The batter will be little thick. Add the instant coffee little by little until you get a smooth batter.</li>
<li>Pour into cupcake cases in tray. </li>
<li>Preheat your oven and bake at 150 degree centigrade for 15-20 minutes. </li>

<li>Chop tomato, capsicum and onion into very small pieces. Mix together</li>
<li>Heat tawa and spread little oil</li>
<li>Pour a laddle of batter and let it spread by itself. </li>
<li>Put a handful of vegetable mix on top of it and cover with a lid. Cook on medium flame. </li>
<li>Wait for 2 minutes. </li>
<li>Open the lid and turn the dosa to the other side. Again cook for 2 minutes or until done. </li>
<li>Serve hot with chutney</li>

It is long weekend this time (all together 4 days)here in bahrain. And so the request for snacks and special foods will be more too. I tried these quick and easy paneer filling to make paneer puffs. I had earlier made puff pastry sheets and kept it in freezer. So it was easy to take it, thaw and bake. You can use this filling to make paneer samosa or paneer dosa. We love paneer and love to add it in anything. You can also add green peas or capsicum to the filling. You can buy puff pastry sheets from super markets. So don't hesitate to try this simple yet yummy puffs.<br />

<li>Thaw your paneer and crumble it.</li>
<li>Heat a pan </li>
<li>Add little oil</li>
<li>Add chopped onion and ginger</li>
<li>Saute until it turns pink and transparent</li>
<li>Add the chilli and turmeric powders. Saute until the raw smell goes.</li>
<li>Add chopped tomato and crumbled paneer. Add salt to taste.</li>
<li>Saute, cover and cook for 5 minutes.</li>
<li>After 5 minutes switch off the flame and add chopped coriander leaves. </li>

<li>Thaw your puff pastry sheets.</li>
<li>Allow your filling to cool. </li>
<li>Put the filling in the sheet and fold into preferred shape. </li>
<li>Preheat your oven at 200 degree centigrade.</li>
<li>Keep the filled puff pastries in a baking dish.</li>
<li>Beat one egg well and brush it over the filled pastries.</li>
<li>Keep in oven and bake for 20 minutes are 200 degree centigrade. </li>

This is strawberry flavoured kesari. Hershey's strawberry syrup was sitting in my cupboard for sometime. I love its flavour and colour. I didn't know it would come out this well. The result was very tasty. I made this for a few friends of mine and they all loved it. Here I haven't added any extra colour. It is the colour of the syrup. Do try this one for your kid.<br />

<li>Powder sugar along with cardamom seeds. Keep aside</li>
<li>Heat a pan and add rava. </li>
<li>Dry roast it for 2-3 minutes till you get an aroma (don't burn it).</li>
<li>To this add boiled water and stir on low flame. If required add more water so rava cooks well. (Mash all the lumps)</li>
<li>Once it has cooked add sugar-cardamom powder and stir well. </li>
<li>Add the Hershey's strawberry syrup.</li>
<li>Allow it to thicken. Stir occasionally. It will thicken soon. </li>
<li>Now add ghee and stir until it starts pulling away from the pan. (it becomes a mass and doesn't stick to the pan)</li>
<li>Grease a plate with ghee and spread this kesari onto it. </li>
<li>When it cools down cut into desired shape and enjoy. </li>

Most of the quiche recipes contain lots of cheese and butter. I was eager to try one quiche but these guilt feeling ingredients refrained me from trying it. Then yesterday I tried this not much buttery and no cheese quiche which tasted nice. It is a healthy breakfast for your family. Here I've tried sausages as main ingredient. You can make it more healthy by choosing your favourite ingredient and loading with cheese if your kids like it.<br />

<li>Onion - 1 medium</li>
<li>Egg - 1 </li>
<li>Milk - 2 tsp</li>

<b>Method</b><br />
<span style="color: red;">For the base pastry</span><br />
<ul style="text-align: left;">
<li>Rub frozen butter and frozen oil out into the wheat flour.</li>
<li>Add salt to taste</li>
<li>Add required amount of cold water to make a dough. Cover it with aluminium foil and refrigerate for 30 minutes.</li>
</ul>
<span style="color: red;">For filling</span><br />
<ul style="text-align: left;">
<li>Mix together milk and egg. Add salt and pepper as required.</li>
<li>Add grated cheese to egg-milk mix. Keep aside (If you're not using cheese, omit this step)</li>
<li>In a hot pan add little oil and followed by chopped onion. Add salt to taste.</li>
<li>Add chopped sausage pieces and stir fry. </li>
<li>Add oregano and pepper powder. Stir fry until done and keep aside</li>

<li>Preheat oven at 180 degrees centigrade.</li>
<li>Take the refrigerated dough and roll it into the size of your pie/tart dish.</li>
<li>Butter the base of the tart dish</li>
<li>Press the rolled out dough into the dish and cut off the extra at the rims. </li>
<li>Put the filling into it and pour the egg- milk-cheese mixture. </li>
<li>Bake in preheated oven at 180 degree centigrade for 25-30 minutes</li>
