Beetroot cucumber raita

A very comforting raita which is a combination of beetroot, cucumber and coriander leaves. It makes you happy and gives you a cool soothing effect. It tastes so new that you feel like having the whole dish yourself. I got this recipe from an old magazine and thought of sharing it with you.


Ingredients
  • Curd - 1 & 1/2 cup
  • Sugar - 1 tsp
  • Beetroot - 1 small (grated and cooked)
  • Salad cucumber - 1 diced
  • Coriander leaves chopped - 2 tbsp
  • Green chilli - 1 chopped
  • Grated coconut - 1 tbsp (optional)
  • Salt to taste
For tempering
  • Oil - 1/2 tsp
  • Cumin - 1/2 tsp
  • Asafoetida - 1/4 tsp



Method
  • Mix together curd, sugar and salt.
  • To this add rest of the ingredients and mix well.
  • Heat oil in pan. When hot, put in cumin and asafoetida stir and switch off the flame.
  • Pour over raita and mix. Serve chilled.
