A very comforting raita which is a combination of beetroot, cucumber and coriander leaves. It makes you happy and gives you a cool soothing effect. It tastes so new that you feel like having the whole dish yourself. I got this recipe from an old magazine and thought of sharing it with you.
Method

Ingredients
- Curd - 1 & 1/2 cup
- Sugar - 1 tsp
- Beetroot - 1 small (grated and cooked)
- Salad cucumber - 1 diced
- Coriander leaves chopped - 2 tbsp
- Green chilli - 1 chopped
- Grated coconut - 1 tbsp (optional)
- Salt to taste
- Oil - 1/2 tsp
- Cumin - 1/2 tsp
- Asafoetida - 1/4 tsp
Method
- Mix together curd, sugar and salt.
- To this add rest of the ingredients and mix well.
- Heat oil in pan. When hot, put in cumin and asafoetida stir and switch off the flame.
- Pour over raita and mix. Serve chilled.
