Breakfast Bread Bake

This is a very simple bread bake which makes a very filling breakfast. Try this on a day when you are not in a mood to work out the usual ones. Once you've the steamed vegetables and white sauce, it just takes the time to get baked. Increase the pepper powder according to your tolerance level. Add lots of cheese if you like. I didn't use cheese for this time. Enjoy with a hot cup of tea. You can use your choice of vegetables like mushrooms, cauliflowers etc.

You need

  • Bread slices - 6
  • All purpose flour - 1/2 tbsp
  • Olive oil - 2 tsp
  • Butter - 1 tsp
  • Carrot - 1/2 of one chopped
  • Beans - 8 nos. cut length wise
  • Frozen green peas - a handful
  • Corn - a handful
  • Milk - 1 cup
  • Egg - 1
  • Pepper powder - 2 tsp
  • Salt to taste
  • Cheese grated - as required (optional)

Method

  • Beat the egg. Add little salt and keep aside.
  • Steam all vegetables together for 5 minutes or until half cooked. Keep aside
  • Heat a pan
  • Add olive oil and butter together. When it becomes hot add the all purpose flour and stir well for 30 seconds
  • Add milk and stir continuously without forming lumps until you get it thick. Start adding with 1/2 cup of milk and add more milk as required.
  • Add pepper powder and salt. Mix well
  • Add the beaten egg and steamed vegetables. Stir well. Switch off the flame. You'll have a thick saucy gravy with veggies.
  • Add grated cheese to this as you wish and mix well
  • Cut each bread to four pieces.
  • Butter the baking dish and arrange bread slices. I used a round one. Cover the bottom of the pan with slices.
  • Pour 3/4 of the the above white sauce with egg and vegetables.
  • Top with remaining bread slices and pour the remaining veg-egg mix
  • Add grated cheese to the top.
  • Bake at 150 degree celsius (that is my oven's best performing temp) for 30 minutes or until a tooth pick inserted comes out clean. Use your oven accordingly
